Taylor’s Dual Temp Infrared Thermocouple Thermometer offers two types of thermometers in a single tool. The thermocouple’s fold out probe allows for easy temperature measurements from foods that require core temperatures readings like meats; the infrared thermometer provides quick and accurate surface temperature readings. The thermocouple has a temperature range of -67°F to 626°F/-55°C to 330°C and the infrared thermometer has a temperature range of -67°F to 482°F/-55°C to 250°C. The thermocouple thermometer also has a 0. 5°F (or 0. 2°C) resolution and a 3: 1 distance-to-spot ratio. This feature rich kitchen tool also has min/max and hold functions, auto-off to preserve battery life, a HACCP pass/fail light system to notify the user of potential violations and an IP65 rating. The thermocouple thermometer also comes with a convenient black nylon storage case.

And sadly (!!!) I've bought tons (here on Amazon) that I've had to throw out!! Seriously it sucks but not anymore.
I've been cooking for over 4 decades and have dealt with many poor performing, poorly designed thermometers (old metal with glass top meat therm, several manual candy therms, and one electric therm).
The meat therm is from decades ago and is there for nostalgia :-) the candy therms.. manual and elect were bought here on Amz recently.
The manual therms are so-so and a pain to use with chocolate and make things worse. They hard to get an accurate temp because the clips that keep them attached to a double-boiler (for example) get in the way and cause chocolate to cool and harden around the bulb. BAD! So the temp is the chocolate cooled on the bulb and not what's melting (or not) in the cooking pan. Even stirring isn't enough. You have to rub off the bulb and this is beyond a pain.
The other electric therm was an el-cheapo that was a metal probe only based unit that was inaccurate.
This has both infrared checking and handy metal probe for insertion. You can use both and confirm. Both are very good and very close.
The infrared detector is a LIFESAVER with chocolate in a double boiler!! Aim the thing for the surface of the melted chocolate and click the button and you can quickly aim the IR and the temp (C or F) is taken and held for a few seconds for you to read close up (bad eyes here).

I've confirmed the probe too and they are really close. The nice thing about the probe is that it's slim and little food product is wasted so it's just an easy wipe down to clean (when you want to confirm with probe).
I use the IR on everything now. Cool to see the temp of my bread as it's rising. I can confirm the correct temp for the yeast to grow. No disturbing the raising dough.. just aim, click and voila.
The thing that distinguishes the Taylor from the popular and similarly priced Thermapen, though, is the infrared thermometer. This function reads the surface temperature of objects using IR (heat radiation). For cooks, the main use is to check the temperature of preheated frypans, woks, etc., a function I find myself using at least as often as I use the probe. With a little experimentation, you can figure out the ideal temperature for browning meat, sweating vs. browning onions, or cooking pancakes, stirfries, etc. This makes it much easier to avoid either steaming food you meant to caramelize or burning your good olive oil and smoking up the kitchen. The IR function is not perfect, however. It defaults to a reading simply of "high" somewhere around 500 degrees F., which is not high enough for blackened fish or many wok applications. A more serious limitation is that it does not read effectively off of highly reflective surfaces, such as most stainless cookware, presumably because the probe also reads the temperature of whatever cool surface you see in the reflection. The IR function has worked well with all of the cast iron, anodized aluminum, and non-stick cookware I have tried, and I would expect it to be useful on most dark surfaces. I have no idea how accurate the readings are, but they give about the right melting and smoking temperatures for butter and oils, so they are probably good enough for cooking. Instrument-grade IR thermometers often read much higher temperatures and are probably more accurate. I don't know whether they would also work better with stainless skillets.
Although the Taylor is more expensive than less capable meat thermometers, the combination of fast and accurate probe readings and the ability to calibrate pan-cooking temperatures should make it appealing to serious home cooks.

The display is very clear and easy to read. I have seen in other (1 star!) reviews that people are complaining that the display is not horizontal and that they are injuring themselves or having to contort themselves in order to read the temp. I personally have never had an issue reading the temp while the display was sideways. The idea that you HAVE to have your head perfectly in line with what the device in order to read 3 large numbers (to the point of injuring yourself to do so) is really kind of silly.
I've used a ThermaPen before, and the temp does come faster than the Taylor, but in my experience it's about 1-2 seconds faster and I'd rather have the IR capability of this unit. All in all, a great purchase and something I highly recommend to someone who takes their cooking seriously.
